Yellow teas are among China’s rarest teas and our tea comes from the Sunon region of China. Yellow teas go through a very special process; unlike green tea where the tea is heated, rolled and dried, yellow tea has an extra stage where it is gently heated and allowed to mellow by a process of light fermentation. This is achieved by gently firing the leaf to kill the enzymes, the warm leaf is wrapped into small bundles inside cloth or paper and left for a few hours, then heated and wrapped again before being dried. This repeated heating and wrapping mellows and smooths the flavour of the tea, changes the vibrant green of the leaves to a yellow green and produces a yellow green liquor that is gentle and mild.
The flavour of the brewed drink has smooth thick buttery and cocoa notes.
